On the lump tuna subject. You can say what you want, but it’s ALWAYS good when I eat it. Lactic acid this, lactic acid that, whatever; it tastes good to me. When freezing, wrap in saran wrap and then vacumn pack. Of course the longer you keep the quality will degrade.
If you want “superior” tuna from east or west coast, go ahead and order some, by the time it gets down here it’s no longer “fresh” IMO.
Just to throw a little wrench in this subject. What about the Commercial Bluefin tuna caught on the east coast? From my understanding most of those are caught on rod and reel….
