This is one of my favorite ways to eat wild duck. First let me say that all the ducks I harvest are aged for 3 to 7 days and then soaked in ice water for 24 hours before being frozen in water...Now the recipe
Put the breast in a zip lock baggie and pound with mallet (prevents splatter)
Soak breast in favorite marinate. I make on using Zea's Ty rib sauce as the base
Then coat with panko bread crumbs...to properly do that; drain breast from marinate and dip in seasoned beaten egg then coat in flour, then dip in egg again and coat feel in the panko.
Fry on medium each side about 1 minute...do not over cook
Serve with apricot pepper jelly or similar....and fight over the last one!!!!! Justnfinished off some Greys...they were awesome

I buy the pepper jelly from "Aloha in Oregon" on line, they have all sorts of cool jellys
